The pineapple was roasted in a Glasgow restaurant, then macerated together with fresh hand-picked Scottish juniper, ginger and thyme, distilled, then matured in Pedro Ximénez sherry casks with more fresh roasted pineapple, fresh ginger and thyme, filtered and bottled.
Tasting Notes - Great sipped on its own with ice or served long over ice with soda and a julienne of fresh ginger.
