For Pilots second Barrel-Aged edition they wanted to try something slightly different.
They have beefed-up a traditional Scotch Ale recipe with nine different malts, refiners syrup and molasses, then fermented it with raisins and dates. Finishing half in Speyside whisky barrels and a half in bourbon barrels with a farmhouse yeast blend for the best part of a year.
This is a smooth, complex and vinous beer with strong oak vanillins, fruity esters and warm, spicy phenolics, resulting in a taste somewhat reminiscent of an Oloroso sherry. Sip with care; this is one to take your time over.
