Sabadiego salami - a rare black embutido from the tradition of Spain.
This blood rich chorizo is full of sweet onion, smoked paprika, garlic, pork and oregano. Difficult to describe, but so hard to stop slicing. The sweetness of the onion, the sharpness of the salami itself, the smoke, the richness all go beautifully with a dry Oloroso, or a beer, or just a 5-minute break.
